A cool salad for a warm summer day was created by Half Moon Bay resident, Shirley Kellicutt. It’s great for any meal from a casual pot luck to a weekend BBQ. Also appealing is the fact that it is very low in calories and high in nutritional value.
Celery, Watermelon and Cucumber Salad
2 cups 1-inch pieces celery
4 cups 1-inch pieces cubed, seeded watermelon
2 cups 1-inch pieces cubed, peeled and seeded cucumber
1 teaspoon kosher salt
chopped celery leaves
freshly squeezed lemon juice, optional
6 ounces crumbled feta cheese
In a medium bowl, combine the celery, watermelon, cucumber, celery leaves and salt. If desired, season with a squeeze of lemon juice to taste.
Toss to mix. Cover and refrigerate for two to three hours.
Prepare feta cheese in a bowl for each person to top their salad.
Serves 4.
