Princeton Seafood Restaurant and Market have been serving fresh seafood for 25 years. The fish and chip restaurant with a seafood market is located at Princeton harbor on the Johnson pier. The fish market is a destination point and has become known as the “Biggest Little Fish Market On The Coast.” Contact them at 650-726-2722.

Grilled Fresh Albacore Tuna

Buy a whole fish or equal amount of fillets  that they have already been cut.

Rinse and pat dry. In a small bowl add 1/2 cup teriyaki sauce, 1/2 cup BBQ sauce and 4 teaspoons of white or brown sugar. Mix well.

Cut off the narrow ends of the fillet. They will need less time to broil.  Paste the fillets with your sauce and let sit for 1 hour.

Prepare BBQ coals for a mild heat and lay the tuna on the grill.  Depending on the size of your fillet,  it will need about 4 to 7 minutes per side. The end pieces will not take as long to cook.

The real trick is to serve the fish with the center cooked rare for maximum flavor and moisture.  Make a nice garden salad, place this rare cooked tuna on top of the salad and sprinkle with balsamic vinegar dressing.
