Coastside Event— Women in Government: Discovering Leadership

Coastside women interested in government have an opportunity to attend a free workshop on becoming involved in the community by applying for and getting appointed to a local board or commission. The workshop date is September 10, 2011 from 9 to 11 a.m. and will be held at Seton Medical Center Coastside in Montara on the San Mateo County coast.

Half Moon Bay Coastside Land Trust Gallery Opening on September 8, 2011

Celebrate the opening of the Coastside Land Trust Gallery.

The gallery will feature photographs of the Coastside by Beau Gill. Gill is a life-long professional photographer and the subjects of his gallery photographs will be the landscapes, flowers and wildlife seen along the San Mateo County coast.

The opening is Thursday, Sept. 8 from 4:30 to 8 p.m. The gallery is located at 788 Main Street, Half Moon Bay. Light refreshments will be served.

Artwork sales will benefit the mission of the Coastside Land Trust to permanently protect open space along the San Mateo County coast.

Quick Green Bean Recipe for Meatless Mondays

There are plenty of days I don’t feel like preparing a complex meal after a long day in the office. And running around the Coastside often gets me home too late to deal with complicated recipes.

Here’s another tip for Coastside cooks.

Green Beans with Chinese Black Bean Sauce

4 to 6 cups of fresh green beans

1/4 cup fresh chopped mint

3 tablespoons Chinese black bean garlic sauce

Cook green beans in 3/4 cup vegetable broth until tender. Mix garlic sauce and mint in cup. Add to beans and toss.

Since a cup of green beans has 1 gram of protein, if you want to use this recipe as a main dish, add legumes such as lentils or your favorite canned beans like garbanzos or white kidney beans. Serve with brown rice and a salad of your choice.

Green beans are low in calories and carbs and rich in lutein, beta-carotene, violaxanthin and neoxanthin.

Roasted Corn and Potato Chowder Soup Recipe

With so many great cooks on the Coastside, it’s fun to find new recipes to share. This is a wonderful soup for all you vegans and people with a restricted diet. We’ve included some of Cathy Elton’s comments.

I was never a big fan of cream-based soups, but corn chowder was an exception. So sweet, so creamy, so dreamy … it’s one of the things I’ve missed since having to change my diet. So I was excited to find this recipe for Roasted Corn and Potato Chowder from the blog Leafy Greens and Me. Instead of cream, it calls for rice milk (I used almond milk, my non-dairy milk of choice.)
